Here at Jersey Girl Cheese, we offer a variety of Italian style cheeses that are typically found in the Southern region of Italy. They are made with cow or goat milk, and then aged for a certain amount of time. This could be anywhere from a week to several months, depending on the flavor and sharpness we look to achieve.
 

One of the most distinguishing aspects of Jersey Girl Cheese is that all our cheese is cave aged. We built a cave into a hillside at Hillcrest Orchard and Dairy, the home of Jersey Girl Cheese. The cave stays at a constant temperature ideal for drying and aging our cheese.
